Warm Cabbage Salad

Ingredients:
  • ⅔ c. olive oil
  • ½ tsp salt
  • 10 strips of bacon
  • 1 tbsp Dijon mustard
  • 1 sm head of red cabbage
  • 1 sm head of napa cabbage
  • ½ c. balsamic vinegar
  • 1 tsp garlic (1 clove)
  • 10 cherry tomatoes
  • 1 tsp ground black pepper

Directions:
  1. Cook bacon in strips until crispy. Cool on paper towel. Discard fat.
  2. For the vinaigrette: in a bowl combine the vinegar, mustard, garlic, salt and pepper. While whisking, drizzle in the oil.
  3. Finely slice the cabbages.
  4. In a large sauté pan, crumble the bacon. When it begins to sizzle add the cabbage.
  5. Add the vinaigrette and cook on medium low until the cabbage is soft.
  6. Check the flavouring (you may need to add more balsamic), add salt and pepper to taste.
  7. Stir in tomatoes and serve warm.
